Chocolate truffles are made by warming heavy cream into good-quality dark chocolate to form a ganache, letting it set, then rolling it into small rounds and coating them in cocoa powder. In a double boiler or a heatproof bowl set over a saucepan of simmering water, melt the finely chopped chocolate gently. Stir until smooth and remove from heat.
In a small saucepan, bring the heavy cream to a simmer over medium heat. When bubbles form along the edges, remove from heat and pour over the melted chocolate.
Add vanilla extract and whisk until the mixture is fully combined and shiny.
Let the mixture cool to room temperature, then place it in the refrigerator for about 2 hours, or until firm enough to handle.
Line a baking sheet with parchment paper. Using a small melon baller or teaspoon, scoop the chocolate mixture into small, 1-inch rounds and roll quickly between your palms to form balls.
Roll each truffle in the cocoa powder, gently tapping off excess. Arrange on the prepared baking sheet. Refrigerate until set, about 30 minutes.
