A rich chocolate pie built on a flaky, buttery crust with a smooth, dense ganache filling. The contrast between the crisp pastry and the thick chocolate center is what makes this one worth the effort. Plan on about 1.5 hours from start to finish, including chill time.

Instructions
Prepare the Crust:
In a mixing bowl, combine the flour, sugar, and salt. Add the cold butter and use a pastry cutter or your fingers to work it into the flour until the mixture resembles coarse crumbs. Add the ice water a tablespoon at a time, mixing just until the dough holds together.
Roll the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
Preheat the oven to 350°F (175°C).
Once chilled, roll out the dough on a lightly floured surface to fit your pie dish. Press the dough into the dish and trim any excess. Prick the bottom with a fork.
Bake the crust for 15 minutes or until lightly golden.
Make the Filling:
Bring the heavy cream to a simmer in a saucepan over medium heat. Remove from heat and add the chopped chocolate, whisking until smooth.
In a separate bowl, whisk together the eggs and vanilla. Slowly pour the chocolate mixture into the eggs, whisking continuously to prevent curdling.
Assemble the Pie:
Pour the filling into the pre-baked crust. Bake in the oven for 30 minutes, or until the edges are set but the center remains slightly jiggly.

Notes
For a twist, consider adding a tablespoon of espresso powder to the filling for a mocha flavor.
Ensure all ingredients, especially the chocolate, are of high quality for the best results.
