The filling is cooked on the stovetop and poured into the pre-baked shell before chilling for several hours until firm. Total active time is around 30 minutes, with the refrigerator doing the rest of the work.
Crust: Preheat the oven to 350°F (180°C). In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Press into the bottom and up the sides of a pie dish. Bake for 10 minutes, then let it cool completely.
Chocolate Filling: In a saucepan, whisk together milk, sugar, cocoa powder, cornstarch, and salt over medium heat until smooth. Bring to a gentle boil, cooking until thickened, about 5 minutes. Remove from heat and stir in chopped chocolate and vanilla until chocolate is melted and mixture is smooth. Pour filling into cooled crust and smooth the top.
