Instructions
Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan and set aside.
In a mixing bowl, whisk together the all-purpose flour, baking soda, and salt. Set aside.
In another bowl, cream the softened butter and granulated sugar together until light and fluffy. This should take about 2-3 minutes.
Add the eggs one at a time to the butter-sugar mixture, beating well after each addition. Stir in vanilla extract.
Mix in the mashed bananas and sour cream until well combined.
Gradually add the dry flour mixture to the wet ingredients, stirring gently until just combined. Be careful not to overmix.
Pour the batter into the prepared cake pan, smoothing the top with a spatula.
Bake in the preheated oven for 45 minutes or until a toothpick inserted into the center comes out clean.
Allow the cake to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
