6ozdark chocolateat least 70% cacao, finely chopped
½cupheavy cream
1tbspinstant espresso powder
1tspvanilla extractpure
Instructions
For the Crust:
Preheat oven to 350°F (175°C). Grease six tartlet molds lightly with butter.
In a bowl, whisk together flour, cocoa powder, powdered sugar, and salt. Work in the cubed butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs.
Press the crust mixture evenly into the prepared tartlet molds, about 1/4 inch thick. Dock with a fork to prevent bubbles and bake for 10-12 minutes until set. Cool on a wire rack.
For the Filling:
In a double boiler, heat heavy cream and espresso powder lightly until steaming but not boiling.
Add chopped dark chocolate into the cream, removing it from heat, and stir until smooth and glossy. Mix in the vanilla extract.
Pour this divine mixture into the tartlet shells and smooth out with the back of a spoon or a knife.
