Instructions
Carefully peel and pit the avocados. Place the avocado flesh in a food processor, ensuring it's smooth without chunks. This creates the mousse's creamy base.
Melt the dark chocolate in a heatproof bowl over a pan of simmering water, stirring gently until smooth. Keep an eye on it to prevent scorching.
Add the melted chocolate to the avocado in the food processor along with the cocoa powder, maple syrup, vanilla extract, and sea salt. Blend until the mixture is silky and uniform in color.
Taste and adjust sweetness if desired by adding a little more maple syrup. Blend again briefly to incorporate.
Spoon the mousse into serving dishes. Cover and chill in the refrigerator for at least 30 minutes to allow flavors to meld and the mousse to set.
