Instructions
Preparation:
In a large mixing bowl, whisk together the flour, cold water, soy sauce, salt, and black pepper until smooth. The batter should have a slightly thinner consistency than pancake batter. Adjust with additional water if needed.
Gently fold in the julienned mixed vegetables, ensuring they are evenly coated with the batter.
Cooking:
Heat 1 tablespoon of vegetable oil in a non-stick skillet over medium-high heat (approx. 200°C / 390°F). Pour a ladle-full of batter into the skillet, spreading it out to form a thin, even layer.
Cook each side for around 3-4 minutes until the edges turn golden brown and the pancake is crispy. Adjust heat to ensure even cooking without burning.
Repeat with the remaining batter, adding more oil to the skillet as needed.
Dipping Sauce:
In a small bowl, combine soy sauce, rice vinegar, sesame oil, and sugar. Stir until sugar is dissolved. Sprinkle with toasted sesame seeds before serving.
