Coffee and walnut cake is a classic British layer cake built around a strong coffee-flavored sponge and a coffee buttercream frosting, with chopped walnuts adding texture throughout. Instructions
Preheat your oven to 350°F (175°C). Grease and line two 9-inch round cake pans with parchment paper.
In a large mixing bowl, whisk together the sifted all-purpose flour, baking powder, and salt. Set aside.
In another bowl, cream the softened butter and light brown sugar using an electric mixer until light and fluffy, about 3-4 minutes.
Add the eggs, one at a time, into the creamed mixture, beating well after each addition for a smooth batter.
Mix in the brewed coffee and vanilla extract until well combined.
Gradually fold in the dry ingredients into the wet mixture, then gently stir in the chopped walnuts.
Divide the batter equally between the prepared cake pans and smooth the top with a spatula.
Bake in the preheated oven for 30-35 minutes, or until a skewer inserted in the center comes out clean.
Allow the cakes to cool in the pans for 10 minutes before transferring them to a cooling rack to cool completely.
For the frosting, beat together the softened butter, sifted powdered sugar, brewed coffee, and vanilla extract to achieve a smooth, creamy frosting.
Once the cakes are completely cool, spread a layer of frosting on top of one cake layer, then place the second layer on top and frost the top and sides of the cake for a smooth finish.
