Instructions
Preheat the oven to 350°F (175°C). Grease a 9-inch round cake pan and line the bottom with parchment paper for easy removal.

In a large bowl, use an electric mixer to cream the butter and sugar until light and fluffy, about 5 minutes. Add the eggs one at a time, beating well after each addition. Mix in the lime zest and vanilla extract.
Gradually add the dry ingredients to the butter mixture, alternating with the coconut milk and lime juice. Begin and end with the dry ingredients, mixing just until combined.
Pour the batter into the prepared cake pan and smooth the top. Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
Allow the cake to cool in the pan for 10 minutes, then turn out onto a cooling rack and let it cool completely.
While the cake cools, prepare the frosting. Beat the softened butter until creamy. Gradually add the powdered sugar, then the coconut cream and vanilla extract, beating until fluffy and spreadable.
Once cooled, frost the cake with the prepared frosting, and sprinkle the toasted coconut on top as a garnish.
