Bavarois — also called Bavarian cream — is a chilled, set dessert made from a vanilla custard base lightened with whipped cream and stabilized with gelatin. It needs at least 4 hours to set in the refrigerator, making it a great make-ahead option for dinner parties or special occasions.
In a saucepan, combine the milk and the split vanilla bean. Heat gently until just simmering, then remove from the heat and allow the vanilla to infuse for about 10 minutes.
Sprinkle the gelatin over 1/4 cup of cold water and let it bloom for about 5 minutes, until fully absorbed.
Remove the vanilla bean from the milk, scrape its seeds into the mixture, and add the sugar. Stir until the sugar completely dissolves.
Gently reheat the milk mixture and add the bloomed gelatin, stirring until fully dissolved. Do not allow the milk to boil.
Strain the mixture through a sieve into a clean bowl to remove any solids.
Let the mixture cool until it is just warm, stirring occasionally to prevent a film from forming.
In a separate bowl, whip the chilled heavy cream until it forms soft peaks. Gently fold the whipped cream into the cooled gelatin mixture, ensuring it's fully incorporated.
Pour the bavarois mixture into individual serving molds or ramekins, cover, and refrigerate for at least 2.5 hours or until set.

To enhance flavor, consider infusing additional spices such as a hint of cardamom or a splash of almond extract.
For vegetarians, use agar-agar as a substitute for gelatin, following the package instructions for conversion.
