Classic Strawberry Shortcake layers tender, lightly sweetened shortcakes with fresh sliced strawberries and whipped cream for a simple, crowd-pleasing summer dessert. The shortcakes bake in about 15 minutes and are best served the same day while still slightly warm. Macerating the strawberries with a little sugar ahead of time draws out their juices and creates a natural syrup.
Preheat your oven to 425°F (220°C). In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt. Using a pastry cutter, cut in the cold butter until the mixture resembles coarse crumbs.
In a separate bowl, combine the milk and the beaten egg. Pour the liquid into the dry ingredients, stirring until just combined. Turn the dough onto a floured surface and gently knead to bring it together.
Roll the dough to about 1-inch thickness and use a round cutter to cut out shortcakes. Place them onto a baking sheet lined with parchment paper and bake for 12-15 minutes, until lightly golden. Let them cool on a rack.
Prepare Strawberry Topping:
While the shortcakes are baking, combine strawberries, sugar, and lemon juice in a medium bowl. Let them macerate for at least 30 minutes to release their natural juices.
Make the Whipped Cream:
In a chilled mixing bowl, whip the heavy cream with powdered sugar and vanilla extract until soft peaks form. Be careful not to over-whip.

Notes
For a different twist, try adding a hint of basil to the strawberries for an aromatic surprise.
If strawberries aren't in season, switch to another berry or a mix of your favorites.
