Classic Rice Pudding with a Citrus Twist

Instructions
Rinse the rice under cold water using a fine mesh sieve until the water runs clear, removing excess starch.
In a medium saucepan, combine the milk, rinsed rice, sugar, cinnamon stick, and a pinch of salt.
Heat over medium-high heat, stirring frequently, until the mixture comes to a gentle boil.
Reduce the heat to low, keeping the mixture at a simmer, and stir occasionally to prevent the rice from sticking to the bottom of the pan.
Continue to cook for about 35-40 minutes, or until the rice becomes tender and the pudding thickens, resembling a creamy consistency.
Once the rice is cooked, remove from heat, discard the cinnamon stick, and stir in the orange zest and vanilla extract.
Allow the pudding to cool slightly before serving. It will continue to thicken as it cools.

For a richer flavor, consider substituting half of the milk with coconut milk.
To add a dramatic flair, top with a drizzle of caramel or a sprinkle of toasted almonds for extra texture.
