Instructions
In a mixing bowl, combine the flour and salt. Add the chilled butter and use a pastry cutter or your fingers to blend until the mixture resembles coarse crumbs.
Add ice water one tablespoon at a time, mixing with a fork, until the dough just comes together. Form into a disc, wrap, and chill for at least 30 minutes.
Preheat oven to 350°F (175°C). On a floured surface, roll out the chilled dough and fit it into a 9-inch pie dish. Trim and crimp the edges decoratively.
For the filling, in a large bowl, whisk together pumpkin puree, heavy cream, eggs, sugar, cinnamon, ginger, nutmeg, and salt until smooth.
Pour the filling into the prepared crust. Bake for about 55 to 60 minutes or until the center is set and a knife inserted near the center comes out clean.
Remove from oven and let cool to room temperature before serving. The pie will firm up a bit as it cools.
