Classic Pecan Pie fills a flaky, buttery pastry shell with a sweet, gooey mixture of pecans, eggs, sugar, and corn syrup that bakes into a firm, sliceable filling. It is a longtime fixture at holiday tables across the American South. The pie takes about 1 hour to bake and should cool fully before slicing.
In a mixing bowl, combine flour, salt, and sugar. Add the chilled, diced butter and mix with your fingers or a pastry cutter until the mixture resembles coarse crumbs. Gradually add ice water, one tablespoon at a time, mixing until the dough holds together without being wet or sticky.
Roll the dough into a ball, flatten it into a disk, wrap in plastic, and refrigerate for at least 30 minutes.
Preheat oven to 350°F (175°C).
On a lightly floured surface, roll out the dough to fit a 9-inch pie pan. Carefully place the dough in the pie pan, trim excess, and crimp or design the edges as desired.
Prepare the Filling:
In a large bowl, whisk together corn syrup, sugar, melted butter, beaten eggs, and vanilla extract until smooth. Stir in the pecan halves.
