Flaky, buttery, and ready in about 30 minutes, these homemade biscuits get their tender layers from cold butter worked quickly into the dough. They work well as a breakfast treat, a sweet base for strawberry shortcake, or a simple snack with jam and honey.

Instructions
Preheat your oven to 450°F (232°C). Prepare a baking sheet by lining it with parchment paper or lightly greasing it.
In a large mixing bowl, combine the flour, baking powder, and salt. Stir to evenly distribute the dry ingredients.
Add the chilled butter cubes to the flour mixture. Using a pastry cutter, cut the butter into the flour until the mixture resembles coarse crumbs. Alternatively, use your hands to rub in the butter, ensuring it remains cold.
Pour in the milk gradually, stirring gently with a fork until the dough just comes together. The mixture should be slightly sticky but manageable.
Turn the dough onto a lightly floured surface. Pat or roll gently with a rolling pin to a thickness of about 1/2 inch. Fold the dough over itself three times to create layers, enhancing flakiness.
Using a round biscuit cutter, cut the dough into rounds, pressing straight down without twisting for an even rise. Place on the prepared baking sheet.
Bake in the preheated oven for 12-15 minutes, or until the tops are golden brown and the biscuits have risen well.

For an herbed twist, mix in a teaspoon of mixed dried herbs with the dry ingredients.
If buttermilk is unavailable, add a tablespoon of vinegar or lemon juice to the milk and let sit for 5 minutes before use.
