Profiteroles are small choux pastry puffs filled with whipped cream, custard, or ice cream, then drizzled with warm chocolate sauce. The choux dough is cooked twice — first on the stovetop, then baked — which creates the hollow, light shells that hold the filling. Plan for about 1 hour from start to finish.
Prepare the Choux Pastry: In a medium saucepan, combine the water, butter, sugar, and salt. Heat over medium heat until the butter melts and the mixture comes to a boil.
Add Flour: Remove the pan from heat, quickly stir in the flour until fully combined, and return to heat. Stir constantly until the mixture forms a ball and a film appears at the bottom of the pan, about 1-2 minutes. Let cool slightly.
Incorporate Eggs: Transfer the dough to a mixing bowl. Add eggs one at a time, mixing thoroughly after each addition until the dough is smooth and glossy.
Pipe and Bake: Preheat your oven to 190°C (375°F). Transfer the dough into a piping bag fitted with a plain round tip. Pipe small rounds (about 1 1/2 inches wide) onto a lined baking tray and smooth the tops with a moistened finger. Bake for 20 minutes or until golden brown. Let cool.
Chocolate Sauce: In a small saucepan, bring the heavy cream to a simmer. Remove from heat and add the chocolate, sugar, and vanilla. Stir until smooth and glossy.
Assemble Profiteroles: Slice the cooled choux buns in half, fill them with a scoop of vanilla ice cream, and replace the tops. Drizzle generously with warm chocolate sauce.
