Palmiers are thin, crisp French pastries made from puff pastry rolled in sugar, folded into their distinctive heart shape, and baked until caramelized. Also called elephant ears, they need only two ingredients and about 30 minutes from start to finish. They pair well with coffee or tea and keep well in an airtight container for a few days.

Instructions
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
Sprinkle half of the sugar on a clean work surface. Unfold the puff pastry sheets onto the sugar, then sprinkle the remaining sugar and optional cinnamon on top.
Using a rolling pin, gently press the sugar into the dough until it is absorbed and the sheets are 13x13 inches in size.
Fold each side of the pastry sheet to meet in the middle, then fold again to form a long, narrow strip. Gently press together and slice into 1/2-inch pieces.
Place the slices on the prepared baking sheet, cut side up, and ensure they are spaced at least 1 inch apart.
Bake for 18-20 minutes, or until golden brown. Flip them halfway through for even baking. Cool on a wire rack.

Notes
Ensure the puff pastry is cold but pliable for easier handling.
For a citrus twist, try adding a sprinkle of orange zest with the sugar.
If you prefer less sweetness, reduce the sugar by 1/4 cup.
