Homemade chocolate ice cream starts with a cooked custard base of egg yolks, cream, and melted chocolate that churns into a smooth, scoopable texture. An ice cream machine does most of the work; expect about 30 minutes of active prep, 30 minutes of churning, and a few hours in the freezer to firm up completely.

Instructions
In a medium-sized saucepan, combine the heavy cream, whole milk, granulated sugar, and cocoa powder. Whisk together the ingredients until well-blended and smooth.
Place the saucepan over medium heat and cook the mixture, stirring frequently, until it comes to a gentle simmer. Do not let it boil.
Remove the saucepan from the heat and stir in the vanilla extract and salt. Let the mixture cool to room temperature.
Transfer the mixture to a mixing bowl, cover, and refrigerate for at least 2 hours or until it is thoroughly chilled.
Once chilled, pour the mixture into an ice cream maker and churn according to the manufacturer's instructions until you reach the desired creamy consistency.
Use a rubber spatula to transfer the ice cream to an airtight container. Freeze for at least 2 additional hours to firm up before serving.

Notes
For an extra kick of chocolate, you can add small chocolate chunks or chocolate syrup during the last few minutes of churning.
To make this recipe vegan, substitute coconut cream for the heavy cream and almond milk for the whole milk.
