Classic cherry pie features a tangy-sweet filling made from tart cherries tucked inside a buttery, flaky double crust. The filling is thickened with cornstarch and lightly sweetened to let the fruit flavor come through. Plan for about 1 hour 15 minutes total, including bake time and a cooling period before slicing.
To make the crust, combine flour, salt, and sugar in a large bowl. Add cold butter cubes and work in with a pastry cutter or your hands until mixture resembles coarse crumbs.
Gradually add ice water, one tablespoon at a time, mixing gently until dough comes together. Divide into two discs, wrap in plastic wrap, and refrigerate for at least 30 minutes.
Preheat oven to 400°F (205°C). Roll out one dough disc to fit the bottom of your pie pan. Place in pan and trim excess.
For the filling, combine cherries, sugar, cornstarch, lemon juice, and vanilla in a large bowl. Mix until cherries are evenly coated.
Pour filling into prepared crust, dot with butter pieces.
Roll out the second dough disc, place over filling, trim and crimp edges to seal. Cut slits to vent. Brush with egg wash made from beaten egg and milk.
Bake for 50 minutes or until crust is golden and filling is bubbly. Allow pie to cool before serving.

For a deeper flavor, try using 1/4 cup almond flour in place of some all-purpose flour in the crust.
