Classic Cake Donuts
Cake donuts are made from a thick, leavened batter rather than a yeast dough, giving them a dense, tender crumb and a slightly crunchy exterior when fried. Vanilla and a pinch of nutmeg are the key flavors in this classic version. The full batch takes about 45 minutes from mixing to the finished, glazed donut.

Ingredients
For the Dry Components:
- 2 cups all-purpose flour preferably unbleached
- ¾ cup granulated sugar
- 2 teaspoons baking powder ensure fresh for best results
- ½ teaspoon ground nutmeg preferably freshly grated
- 1 teaspoon salt
For the Wet Components:
- ¾ cup whole milk room temperature
- 2 tablespoons unsalted butter melted and cooled
- 2 teaspoons pure vanilla extract
- 1 large egg room temperature
Instructions
- Preheat your oven to 350°F (175°C). Grease the donut pan lightly with butter or a non-stick spray.
- In a large mixing bowl, sift together the flour, sugar, baking powder, nutmeg, and salt. Ensure there are no lumps.
- In another bowl, whisk together the milk, melted butter, vanilla extract, and egg until well combined and slightly frothy.
- Gradually pour the wet ingredients into the dry ingredients, gently mixing until just combined. Avoid overmixing to ensure the donuts stay tender.
- Using a spoon, fill each donut cavity of the pan about 3/4 full. Smooth the surface with the back of the spoon if needed.
- Bake for about 14-16 minutes or until the donuts spring back when touched lightly and a toothpick inserted comes out clean.
- Remove from oven and allow donuts to cool in the pan for about 5 minutes before transferring to a wire rack. Glaze as desired or enjoy plain.
Notes
- For added flavor, try adding a teaspoon of cinnamon to the dry ingredients.
- For a chocolate twist, fold in mini chocolate chips into the batter before baking.
