Instructions
Make the Crust: In a large bowl, whisk together the flour, sugar, and salt. Add the cold butter cubes and use a pastry cutter or your fingertips to cut the butter into the flour until the mixture resembles a coarse meal with pea-sized bits of butter. Gradually add ice water, a tablespoon at a time, mixing just until the dough comes together when pinched. Divide the dough in half, shape into discs, wrap in plastic wrap, and refrigerate for at least 30 minutes.
Prepare the Filling: In a large bowl, combine blueberries, sugar, cornstarch, lemon juice, lemon zest, and vanilla extract. Gently mix until the blueberries are evenly coated. Let the filling sit for about 15 minutes at room temperature.
