Classic Blondies get their rich, caramel-like flavor from brown butter and packed brown sugar rather than chocolate. The batter comes together in one bowl and bakes in about 25 minutes, producing a chewy, dense bar with slightly crisp edges. Cut them into squares once fully cooled for the cleanest slices.
1cupbrown sugarpacked; for a deeper flavor, use dark brown sugar
½cupgranulated sugar
2largeeggspreferably organic
2teaspoonsvanilla extractpure
½teaspoonbaking powder
¼teaspoonbaking soda
½teaspoonsaltsea salt preferred
1 ½cupsall-purpose floursifted for a lighter texture
1cupchopped walnutsoptional, can substitute with chocolate chips or leave out for a nut-free version
Instructions
Preheat your oven to 350°F (175°C). Grease an 8x8 inch baking pan or line with parchment paper for easier removal.
In a medium mixing bowl, whisk together the melted butter, brown sugar, and granulated sugar until smooth and creamy.
Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
In a separate bowl, combine the baking powder, baking soda, salt, and flour. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Fold in the walnuts or your preferred mix-ins, ensuring they are evenly distributed throughout the batter.
Pour the blondie batter into the prepared baking pan, spreading it evenly with a rubber spatula.
Bake for 25 minutes or until the blondies are lightly golden on the edges and a toothpick inserted into the center comes out clean. Do not overbake, as this will alter the chewy texture.
Allow to cool in the pan before slicing into bars. Serve them warm or at room temperature.

Notes
For a richer vanilla flavor, use a vanilla bean paste instead of vanilla extract.
If desired, drizzle with a simple glaze made of powdered sugar and milk for added sweetness.
