Prepare the Crust: In a large mixing bowl, combine the flour, salt, and sugar. Add the cold, cubed butter, and using a pastry cutter or your fingers, blend until the mixture resembles coarse crumbs. Gradually add ice water, 1 tablespoon at a time, mixing gently until the dough holds together. Divide the dough in half, shape into disks, wrap in plastic wrap, and refrigerate for at least 1 hour.
Preheat the Oven: Preheat your oven to 400°F (200°C).
Roll Out the Dough: On a lightly floured surface, roll one disk of dough into a 12-inch circle. Fit it into the pie pan, leaving the excess hanging over the edges. Roll the second disk into another 12-inch circle for the top crust.
Prepare the Filling: In a mixing bowl, combine blackberries, sugar, cornstarch, lemon juice, and cinnamon. Toss gently to coat the berries evenly.
Assemble the Pie: Pour the filling into the prepared bottom crust. Cover with the top crust, seal the edges by pinching them together, and cut slits for ventilation. Brush with beaten egg, sprinkle with coarse sugar.
