All the flavor of classic banana bread baked into individual muffins — ripe bananas and a touch of cinnamon give each one a naturally sweet, warmly spiced taste. They come together in about 30 minutes and work equally well as a breakfast, snack, or dessert.
1 ½cupsall-purpose flourensure it's unbleached for best texture
1teaspoonbaking soda
1teaspoonbaking powder
½teaspoonsalt
½teaspooncinnamon
3mediumripe bananasmashed until smooth
⅓cupmelted butterunsalted preferred
1largeeggroom temperature
¾cupgranulated sugar
1teaspoonvanilla extractpure extract for best flavor
Instructions
Preheat your oven to 350°F (175°C). Grease a 12-cup muffin tin or line with paper liners.
In a large mixing bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon. Set aside.
In another bowl, mash the ripe bananas until smooth. Stir in the melted butter, followed by the egg, sugar, and vanilla extract.
Fold the banana mixture into the dry ingredients using a wooden spoon, mixing just until combined. Be careful not to overmix, as this can make the muffins tough.
Evenly distribute the batter into the prepared muffin tin, filling each cup about 3/4 full.
Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
Allow muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.

For added flavor, consider folding in 1/2 cup of chocolate chips or chopped nuts before baking.
If you're out of ripe bananas, roast unpeeled bananas in a 300°F (150°C) oven for about 15 minutes to intensify their sweetness.
