Classic Apple Pie features a spiced filling of cinnamon- and nutmeg-seasoned apples baked inside a flaky, buttery double crust. It's one of the most straightforward homemade pies you can make, with a total time of around 1 hour 30 minutes from prep to table.
1cupunsalted butterwell-chilled, cut into small cubes

For the Filling:
6-7mediumapplespeeled, cored, and sliced, preferably Granny Smith or Honeycrisp
¾cupgranulated sugar

Instructions
To Make the Crust:
In a large mixing bowl, combine the flour, salt, and sugar. Add the chilled butter and rub it into the flour mixture or pulse in a food processor until it resembles coarse breadcrumbs.
Gradually add the ice water, one tablespoon at a time, mixing gently until the dough just holds together without being wet or sticky. Gather the dough into two disks, wrap in plastic, and refrigerate for at least 1 hour.
To Prepare the Filling:
Preheat the oven to 425°F (220°C). In a separate large bowl, gently toss the sliced apples with sugar, flour, lemon juice, cinnamon, and nutmeg until well coated.
Assembling the Pie:
Roll out one disk of dough on a lightly floured surface to fit a 9-inch pie pan. Transfer the crust to the pan and trim excess dough to a 1-inch overhang.
Pour in the apple filling and spread evenly. Roll out the second disk and place it over the filled pie. Trim and crimp the edges to seal. Cut several slits in the top to allow steam to escape.
Brush the crust with the beaten egg to achieve a golden hue during baking. Place pie on baking sheet and bake for 20 minutes. Reduce oven temperature to 375°F (190°C) and bake for an additional 40-50 minutes until crust is golden brown and juices are bubbling.
