Churro Cheesecake Bars layer a cream cheese filling between two sheets of crescent dough, then get coated in cinnamon sugar for that familiar churro flavor. They bake in about 30 minutes and slice into neat bars that are easy to serve at parties or potlucks.
Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking dish lightly with butter or nonstick spray.
In a small bowl, whisk together 1/2 cup (100g) of the sugar and cinnamon. Set aside.
Lay a sheet of phyllo dough on the bottom of the prepared dish. Use a pastry brush to lightly coat it with melted butter. Sprinkle a tablespoon of the cinnamon sugar mix over it. Repeat this process with several layers, about 5-6 sheets.
In a large mixing bowl, beat the cream cheese until smooth using an electric mixer. Add in the remaining 1/2 cup (100g) sugar, vanilla extract, and egg. Beat until well combined and creamy. Spread the cream cheese mixture evenly over the phyllo layers in the baking dish.
Continue layering the remaining phyllo dough sheets, brushing each with butter and sprinkling with the cinnamon sugar, until the sheets are finished. Ensure the top layer is heavily sprinkled with the cinnamon sugar for a churro-like crust.
Bake in the preheated oven for 30-35 minutes or until the top is golden brown and crispy. Let cool completely before slicing into bars.
