Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a mixing bowl, cream the softened butter and sugar together until light and fluffy. You’re looking for a pale and creamy texture, which should take about 2-3 minutes.
Add the orange zest and salt, mixing until well combined.
Gradually add in the flour, continuing to mix until the dough comes together. It may look crumbly at first, but keep mixing until a soft dough forms.
On a lightly floured surface, roll out the dough to about 1/2 inch thickness. Cut into finger-sized rectangles (typically 1-inch wide by 3-inches long).
Place the shortbread fingers onto the prepared baking sheet and bake for 12-15 minutes, or until the edges are just starting to turn golden. Allow them to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
