Chocolate Cobbler
Chocolate cobbler is a Southern baked dessert that produces its own gooey, fudgy sauce underneath a brownie-like top layer as it bakes. The trick is pouring hot water over the batter before it goes into the oven — no stirring needed. From start to finish, it takes about 45 minutes.

Ingredients
Cobbler
- 1 cup all-purpose flour
- 2 teaspoons baking powder
- ¼ teaspoon salt
- ¼ cup unsweetened cocoa powder preferably Dutch-processed
- ¾ cup granulated sugar
- ½ cup whole milk room temperature
- ⅓ cup unsalted butter melted and slightly cooled
- 1.5 teaspoons vanilla extract pure
Topping
- ½ cup granulated sugar
- ½ cup light brown sugar packed
- ¼ cup unsweetened cocoa powder preferably Dutch-processed
- 1.5 cups boiling water
Instructions
- Preheat your oven to 350°F (175°C).In a mixing bowl, whisk together flour, baking powder, salt, cocoa powder, and granulated sugar.
- Stir in the milk, melted butter, and vanilla extract until a smooth batter forms.
- Pour the batter into a greased 9x9 inch baking dish, spreading it evenly.
- For the topping, sprinkle the granulated sugar, brown sugar, and cocoa powder evenly over the batter.
- Carefully pour the boiling water over the top. Do not stir.
- Bake for 35 minutes or until the edges are firm and the center is gooey and bubbling.
- Allow to cool slightly before serving for the best gooey texture.
Notes
- For a nutty variation, consider adding 1/2 cup of chopped pecans or walnuts to the batter.
- To enhance the chocolate flavor, add a pinch of instant espresso powder to the batter.
