Chocolate chip ice cream starts with a classic vanilla custard base, then gets folded with plenty of dark chocolate chips before churning to a smooth, scoopable finish. It's a straightforward homemade recipe that comes together in about 30 minutes of active time, plus chilling and freezing.
In a medium saucepan, combine 2 cups of heavy cream, 1 cup of whole milk, and 3/4 cup of granulated sugar. Heat over medium heat while stirring continuously until the sugar has dissolved completely. Ensure the mixture does not reach a boil. Look for small bubbles forming at the edges, indicating it's ready.
Remove the saucepan from heat and stir in 1 tablespoon of pure vanilla extract and 1/8 teaspoon of salt. Allow the mixture to cool slightly, then cover and refrigerate for at least 2 hours or until thoroughly chilled.
Once the base mixture is chilled, pour it into your ice cream maker. Churn according to the manufacturer's instructions until the mixture reaches a soft-serve consistency.
In the final five minutes of churning, slowly add in 3/4 cup of chilled dark chocolate chips, allowing them to evenly incorporate.
Transfer the churned ice cream to a lidded container and freeze for at least 4 hours or until firm.
