Chai-spiced pudding is a creamy, set dessert flavored with cinnamon, cardamom, ginger, and black pepper — the same spice blend used in masala chai. It comes together in about 20 minutes on the stovetop and chills until firm. The warm spices give it a distinctly cozy, aromatic flavor that works well year-round.
In a saucepan, combine the whole milk with granulated sugar, and place over medium heat. Stir occasionally until the sugar dissolves completely, and the mixture is warm but not boiling. This should take about 5 minutes.
In a separate mixing bowl, whisk together cornstarch, ground cinnamon, ground cardamom, ground ginger, and ground black pepper. Gradually add a bit of the warm milk mixture, whisking to form a smooth, lump-free paste.
Slowly incorporate the cornstarch mixture into the saucepan with the remaining milk, whisking constantly. Cook over medium heat, stirring until the pudding thickens and coats the back of a spoon. This process takes approximately 10 minutes.
Once thickened, remove from heat and stir in vanilla extract and salt. Pass the pudding through a fine sieve into a serving bowl or individual cups to ensure a smooth texture.
Allow the pudding to cool to room temperature, then cover and refrigerate for at least 1 hour before serving.
