Cassava Delight is a baked dessert made from grated cassava combined with coconut milk and sweetener, finished with a caramel glaze on top. It has a dense, slightly chewy texture and takes about an hour from prep to finish.

In a medium saucepan, combine the grated cassava, coconut milk, sugar, vanilla extract, and salt. Stir thoroughly to ensure the cassava is evenly coated with the mixture.
Cook the mixture over medium heat, stirring continuously for about 10 minutes, or until it thickens, and the cassava becomes tender.
Pour the cassava mixture into a greased baking dish and spread it evenly.
Bake in the preheated oven for 40-45 minutes, or until the top is lightly golden.
In a separate small pan, melt the butter over low heat and add the brown sugar. Stir until the sugar dissolves completely and the mixture is smooth.
Once the dessert is baked, pour the caramel glaze evenly over the top. Allow it to cool slightly before serving.
