Whole cardamom pods are steeped in warm cream to infuse this ice cream with a fragrant, gently spiced flavor before the custard base is churned. The process takes a few hours including chilling and freezing time. It works well on its own or alongside spiced cakes and fruit-based desserts.
In a medium saucepan, combine the heavy cream, milk, and half of the sugar. Bring the mixture just to a boil over medium heat until the edges start to bubble, then remove from heat. Stir in the ground cardamom.
In a separate mixing bowl, whisk together the egg yolks and remaining sugar until the mixture is pale and slightly thickened.
Slowly whisk the hot cream mixture into the egg yolks, a little at a time, to temper them and prevent scrambling. Return the mixture to the saucepan and cook over low heat, stirring constantly, until the mixture coats the back of a wooden spoon, about 170°F (77°C).
Remove from heat and pour through a fine mesh sieve into a clean bowl. Stir in the vanilla extract and let cool at room temperature. Cover and refrigerate for at least 4 hours or until chilled completely.
Pour the chilled custard into your ice cream maker and churn according to the manufacturer's instructions. Transfer to an airtight container and freeze until firm.

For a nuttier flavor, try toasting the cardamom briefly before grinding.
If you prefer a less sweet ice cream, reduce the sugar to half a cup.
To make the ice cream vegan, swap the dairy products with coconut milk and cream, and use a plant-based egg substitute.
