Dough Preparation: In a mixing bowl, combine the flour, sugar, and salt. Add the cold butter cubes, using your fingertips to blend until the mixture resembles coarse sand. Slowly incorporate ice water, a tablespoon at a time, until the dough holds together. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
Filling Preparation: In another bowl, toss the sliced apples with brown sugar, cinnamon, and lemon juice. Let it sit while you prepare the caramel.
Caramel Sauce: In a small saucepan, melt the sugar over medium heat. Carefully add the butter and stir until melted, then slowly whisk in the cream. Remove from heat and set aside to cool.
