Inspired by the sun-drenched tropics and the smooth textures of traditional French custard, this Brown Sugar Banana Custard combines the caramel-like sweetness of brown sugar with the creamy richness of ripe bananas. Perfect for a sophisticated after-dinner dessert or an indulgent brunch treat, this dish offers a velvety texture that dances on the palate.
Preheat your oven to 325°F (163°C). Prepare a bain-marie by placing the ramekins inside a large baking dish.
In a saucepan, melt the butter over medium heat. Add the light brown sugar and stir until the mixture resembles a smooth caramel, around 3 minutes.
Mix the mashed bananas and vanilla extract into the caramelized mixture, stirring continuously until well combined.
In a mixing bowl, whisk together the egg yolks. Gradually, and while whisking, add the warm banana-caramel mix, then return everything to the saucepan.
Add the heavy cream and salt, cooking gently over low heat until the custard thickens slightly and just coats the back of a spoon. Avoid boiling.
Pour the custard evenly into ramekins. Fill the baking dish halfway with hot water, then bake in the preheated oven for 35-40 minutes or until the custard is just set.
Allow the custard to cool slightly before serving. For a smooth, luxurious experience, serve slightly warm.
