Instructions
- In a blender or food processor, combine the blueberries, sugar, lemon juice, and vanilla extract. Blend until smooth and the sugar is fully dissolved.
- Transfer the blueberry mixture into a mixing bowl. Gently fold in the yogurt, ensuring a consistent and creamy blend without air pockets.
- Pour the mixture into an ice cream maker and churn according to the manufacturer's instructions, usually around 20 minutes until thickened.
- Transfer the churned yogurt into a freezer-safe container. Seal the container and place it in the freezer for at least 3 hours to set.
Notes
- For a sugar-free version, substitute granulated sugar with stevia or honey.
- If fresh blueberries aren't available, use frozen ones but thaw them before blending.
- Ensure the yogurt is at room temperature before mixing for smoother consistency.
