Buttermilk gives these blueberry pancakes their fluffy, tender texture, while fresh or frozen blueberries add bursts of tart-sweet flavor throughout. The batter comes together in about 10 minutes and cooks up quickly on a griddle, making them a reliable choice for a weekend breakfast or brunch.
2tablespoonsunsalted buttermelted and cooled slightly
1cupfresh blueberriesrinsed and patted dry
2-4tablespoonsneutral oil or additional butterfor greasing
Instructions
In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
In a separate bowl, beat together the buttermilk, egg, and melted butter until well combined.
Pour the wet ingredients into the dry ingredients, stirring gently until just combined. It's okay if there are a few lumps; over-mixing can lead to tough pancakes.
Gently fold in the blueberries, distributing them evenly throughout the batter.
Heat a non-stick skillet over medium heat and lightly grease with oil or butter.
For each pancake, pour approximately 1/4 cup of batter onto the skillet. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes.
Flip the pancakes and cook an additional 1-2 minutes, or until golden brown on both sides. Adjust heat as necessary to ensure even cooking without burning.

Notes
For an extra zing, add a pinch of lemon zest to the batter.
If fresh blueberries aren't available, frozen ones can be used; no need to thaw, just be aware they might tint the batter blue.
