The seeds are ground into a paste before being folded into the custard, which gives the finished ice cream its distinctive dark color and earthy taste. Allow several hours of churning and freezing time for the best texture.

⅔cupgranulated sugar
4pcsegg yolks
1pinchsalt
Instructions
Begin by lightly toasting the black sesame seeds over medium heat until they release a nutty aroma, about 3 minutes. Use a blender to grind them into a fine paste; adding a teaspoon of hot water can help achieve a smoother texture.
In a medium saucepan, combine the cream, milk, and half of the sugar over medium heat, stirring occasionally until it’s hot but not boiling, around 5 minutes.
In a mixing bowl, whisk together the egg yolks, remaining sugar, and salt until pale and fluffy. Slowly pour half of the hot cream mixture into the yolks, stirring continuously to temper the eggs, then return the mixture to the saucepan.
Cook over low heat, stirring constantly, until the mixture thickens and coats the back of a spoon, approximately 5 minutes.
Remove from heat and mix in the sesame paste until well incorporated. Strain the mixture through a fine mesh sieve into a clean bowl to ensure a smooth texture.
Chill the mixture in the refrigerator until completely cold, for at least 2 hours. Then churn in an ice cream maker according to the manufacturer's instructions.
