Arctic Roll is a retro British dessert made by wrapping a cylinder of vanilla ice cream in a thin layer of raspberry jam and a light sponge cake. The sponge is baked flat, spread with jam, then rolled around the ice cream log and frozen until firm. It takes patience to assemble cleanly, but the total hands-on time is under 30 minutes.

Instructions
For the Sponge Cake:
Preheat your oven to 200°C (392°F). Line a baking sheet with parchment paper.
In a mixing bowl, beat the eggs and caster sugar together using an electric mixer until the mixture is pale and fluffy, about 5 minutes. It should leave a ribbon-like trail when the beaters are lifted.
Gently fold in the sifted flour using a spatula, being careful not to knock out the air. Stir in the milk delicately until just combined.
Pour the batter onto the prepared baking sheet, spreading it evenly. Bake for 8-10 minutes until lightly golden.
Assembling the Arctic Roll:
After baking, let the sponge cool briefly, roll it gently with the parchment to shape, and then unroll while removing the paper.
Spread an even layer of raspberry jam over the surface of the cooled sponge.
Place the ice cream along one edge of the sponge and carefully roll the sponge around it, using the parchment to guide and hold it firmly.
Wrap in plastic wrap and freeze for at least 2 hours or until firm.

To enhance the flavor, try adding a splash of vanilla extract to the sponge batter or dusting the final roll with confectioner's sugar before serving.
If looking for a faster assembly, pre-rolled sponge sheets can be used, though homemade provides superior texture and flavor.
For a fruitier twist, swap raspberry jam with strawberry or blackcurrant preserves.
