This Almond Tart with Honey pairs a crisp shortcrust pastry shell with a soft almond frangipane filling sweetened with floral honey. Toasted sliced almonds on top add a little crunch and a nutty finish. The tart takes roughly 1 hour to prepare and bake, and it slices cleanly once fully cooled.
Preheat the oven to 350°F (175°C). Grease a 9-inch tart pan with a removable bottom.
Combine the flour and salt in a mixing bowl. Cut in the cold butter using a pastry blender until the mixture resembles coarse crumbs. Gradually add ice water, 1 tablespoon at a time, mixing until the dough holds together. Refrigerate for 15 minutes.
Roll out the dough on a lightly floured surface to fit the tart pan. Gently press the dough into the pan and trim any excess. Chill for another 10 minutes.
Whisk together the almond flour and sugar in a separate bowl. Add the eggs, honey, and vanilla extract, whisking until smooth. Pour into the prepared crust and sprinkle with sliced almonds.
