Inspired by the classic buttery and flaky almond croissant, these cookie bars bring the luxurious almond flavor and unique texture into a delightful and easy-to-make dessert. Preheat your oven to 350°F (175°C) and line a 9x9 inch baking pan with parchment paper.
In a mixing bowl, cream together 1 cup of unsalted butter and 1 cup of granulated sugar until light and fluffy using an electric mixer, about 3 minutes.
Add 2 large eggs, 1 teaspoon of vanilla extract, and 1 teaspoon of almond extract; beat until well combined.
In a separate bowl, whisk together 2 cups of all-purpose flour, 1 teaspoon of baking powder, and 1/2 teaspoon of salt.
Gradually add the dry ingredients to the wet mixture and mix until just combined.
Fold in 1 cup of blanched almond flour until fully integrated.
Spread the batter evenly in the prepared baking pan and sprinkle 1/2 cup of toasted sliced almonds evenly over the top.
Bake for 20–25 minutes, or until the edges are golden brown and a toothpick inserted in the center comes out clean.
Remove from the oven and allow to cool in the pan for 10 minutes before transferring to a wire rack.
Dust with 2 tablespoons of powdered sugar before slicing into bars.
