Ground almonds replace a portion of the flour in this cake, giving it a dense, moist crumb and a nutty flavor that comes through in every bite. It bakes in roughly 40 minutes and works equally well dusted with powdered sugar or topped with a simple glaze.
Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan and line the bottom with parchment paper.
In a large mixing bowl, whisk together the almond flour, all-purpose flour, sugar, baking powder, and salt. Set aside.
In a separate bowl, beat the eggs until they are slightly frothy. Gently fold the melted butter, vanilla extract, and milk into the eggs.
Gradually combine the wet ingredients with the dry ingredients, stirring gently with a spatula until just mixed. Be careful not to overmix to maintain the cake's tender crumb.
Pour the batter into the prepared cake pan, smoothing the top with the spatula.
Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean and the top is lightly golden brown.
Cool in the pan for 10 minutes, then run a knife around the edge of the pan to loosen the cake and transfer to a cooling rack to cool completely.
