Smooth and Rich Southern Bourbon Vanilla Ice Cream

by Tammy Smith

The story behind Bourbon Vanilla Ice Cream is one of elegance, indulgence, and a nod to the flavors of the American South. By marrying the creamy simplicity of traditional vanilla ice cream with the bold, caramel-laced complexity of bourbon, this dessert becomes more than a sweet treat—it transforms into an experience. Designed with grown-up palates in mind, it’s a sophisticated twist on childhood nostalgia that invites you to slow down and savor every spoonful.

Vanilla ice cream has long been a staple in dessert menus, appreciated for its balance and ability to complement a wide range of accompaniments. But in the culinary world, innovation often comes from elevating the classics rather than reinventing them entirely. That’s where bourbon—a spirit deeply rooted in American heritage—enters the picture. Originating from Kentucky and crafted primarily from corn, bourbon is cherished for its rich, smoky-sweet undertones, often featuring hints of vanilla, oak, and spice from its time aging in charred oak barrels. These qualities make it an ideal partner for vanilla, heightening its flavor while adding sophistication with each spoonful.

This recipe draws inspiration from traditional French-style custard-based ice cream, which features a luscious, velvety texture thanks to the use of egg yolks, heavy cream, and whole milk. The custard method allows for deep flavor infusion and a decadent mouthfeel that outshines no-churn versions. While the vanilla brings floral and sweet cream notes, the bourbon deepens the profile, contributing a subtle bite that rounds off the custard’s richness. It’s a balance of flavors that walks a fine line between comforting and refined.

The inclusion of bourbon does more than add taste—it also subtly affects the texture. Alcohol lowers the freezing point of the mixture, helping keep the ice cream softer and more scoopable once frozen. While you still get a firm scoop, the presence of bourbon ensures it doesn’t turn icy or solid as a rock. For those who prefer a non-alcoholic version or are making dessert for a family gathering, a teaspoon of bourbon extract can offer that signature smoky-vanilla aroma without the alcohol content.

This dessert captures the essence of Southern hospitality and culinary warmth. It’s perfect on its own or as an accompaniment to classic bakes like pecan pie, peach cobbler, or dark chocolate brownies. What sets it apart is its ability to channel both weekend comfort and special-occasion luxury with a single bite.

Whether served in elegant crystal bowls at a dinner party or scooped atop a crunchy cone under summer skies, Bourbon Vanilla Ice Cream bridges the gap between tradition and modern flair. It’s a celebration of rich American flavors, a tribute to time-honored cooking techniques, and a reminder that the simplest ingredients often produce the most memorable results.

Bourbon vanilla ice cream is a churned custard-based dessert that blends classic vanilla with a measured pour of bourbon for a deeper, warmer flavor. The alcohol also helps keep the finished ice cream scoopable straight from the freezer. Plan on about 30 minutes of active prep plus several hours of chilling and freezing time.

Equipment

  • Ice Cream Maker
  • Saucepan
  • Whisk
  • Mixing Bowl

Ingredients

  • 2 cups heavy cream preferably organic
  • 1 cup whole milk full-fat for creaminess
  • ¾ cup granulated sugar preferably fine grain
  • 1 tablespoon pure vanilla extract or seeds from 1 vanilla bean
  • 3 tablespoons bourbon such as Maker’s Mark
  • 6 pieces egg yolks from large eggs
  • 1 pinch salt to enhance flavor

Instructions

  • In a saucepan, combine the heavy cream and whole milk. Heat over medium heat until the mixture is warm, but not boiling. This will take approximately 5 minutes.
  • In a mixing bowl, vigorously whisk the egg yolks with granulated sugar until the mixture is pale and thick.
  • Slowly add the warm cream mixture to the egg yolks, whisking constantly to temper without cooking the eggs.
  • Pour back into the saucepan and cook over low heat, stirring constantly with a wooden spoon, until thick enough to coat the back of the spoon. This custard will take about 5 minutes, and should not boil.
  • Remove from heat and stir in the vanilla extract, bourbon, and a pinch of salt. Allow the mixture to cool completely.
  • Transfer to an ice cream maker and churn according to the manufacturer's instructions. This typically takes 20-25 minutes.
  • Transfer to an airtight container and freeze until firm, at least 2 hours.

Notes

  • For a non-alcoholic version, substitute bourbon with 1 teaspoon of bourbon extract.
  • Ensure the custard doesn’t boil to avoid scrambling the eggs.
