Comforting English Bread Pudding with Rich Vanilla Sauce

by Lori Wilson

Bread Pudding with Vanilla Sauce is a dessert rooted in rich culinary tradition and timeless comfort. Though commonly associated with English cuisine, its origins trace back to the early 11th and 12th centuries across Europe, where resourcefulness in the kitchen was essential. Known historically as “poor man’s pudding,” this dish was a clever way to repurpose stale or day-old bread—an early example of reducing food waste and transforming simple ingredients into something delicious and satisfying.

In England, bread pudding became a fixture in home cooking, especially during colder months when hearty desserts were particularly welcome. The base of the dish—cubed, dry bread soaked in a rich, sweet custard made of milk, sugar, and eggs—creates a satisfying texture somewhere between cake and flan. Baked until golden on top and creamy within, bread pudding became a beloved offering in both noble manors and working-class homes. The simplicity of the core ingredients made it accessible, while the custard’s creamy richness gave it an air of indulgence.

What sets this particular version apart is the addition of a smooth Vanilla Sauce poured over the warm pudding, elevating it from a humble dish to one fit for a celebratory dessert table. The vanilla bean-infused sauce brings a luxurious silkiness and aromatic depth that balances the rustic texture of the pudding. This isn’t just dessert—it’s nostalgic comfort with elegant flair.

The use of a vanilla bean rather than extract in both the pudding and the sauce highlights a devotion to purity and high-quality ingredients. While vanilla extract is more convenient, using the whole bean adds nuanced warmth and beautiful flecks of real vanilla seeds that visually enhance the richness of the dessert.

Bread Pudding is also a highly adaptable dish, reflecting the cook’s creativity or the pantry’s contents. Some traditional recipes incorporate raisins, dried fruits, nuts, even a splash of spiced rum or bourbon. In the Southern United States, for example, bread pudding is often enjoyed with a buttery whiskey or caramel sauce. In contrast, this recipe stays true to its English roots, focusing on classic cinnamon spice and dairy-rich custard with just enough sweetness to bring it all together.

This dish’s appeal lies both in its rustic simplicity and its capacity for transformation. Whether served as a cozy weeknight dessert or as part of a festive holiday feast, Bread Pudding with Vanilla Sauce speaks to the heart of comfort food traditions around the world. It’s a testament to timeless cooking that values making the most of what you’ve got—turning forgotten bread into a golden, creamy, treasured treat. Each bite feels like a warm hug, rich with heritage and flavor, and always better when shared.

Equipment

  • Oven
  • Mixing Bowls
  • Whisk
  • Baking dish
  • Saucepan

Ingredients

Bread Pudding

  • 10 cups day-old bread cut into 1-inch cubes; preferably French or brioche
  • 4 cups whole milk preferably organic
  • 1 medium vanilla bean split and seeds scraped
  • 1 cup granulated sugar
  • 4 large eggs at room temperature
  • 1 teaspoon ground cinnamon
  • ½ teaspoon salt

Vanilla Sauce

  • 1 cup heavy cream
  • ½ cup whole milk
  • ½ cup granulated sugar
  • 1 medium vanilla bean split and seeds scraped
  • 2 large egg yolks at room temperature

Instructions

Bread Pudding

  • Preheat the oven to 350°F (175°C). Grease a 9×13 inch baking dish.
  • Place the bread cubes in a large mixing bowl. In a saucepan, heat the whole milk with the vanilla bean seeds and the pod until just simmering. Remove from heat and let it cool slightly.
  • In another bowl, whisk together sugar, eggs, cinnamon, and salt. Gradually whisk in the warm milk mixture, ensuring the eggs don’t cook from the heat.
  • Pour the custard over the bread cubes, gently pressing down to soak them thoroughly. Allow the mixture to sit for 20 minutes to absorb.
  • Transfer the mixture to the prepared baking dish and bake in the preheated oven for 40 to 45 minutes, or until the top is golden brown and the pudding is set.

Vanilla Sauce

  • In a saucepan, combine heavy cream, whole milk, sugar, and vanilla bean seeds and pod. Heat over medium until just simmering, stirring occasionally.
  • In a small bowl, whisk the egg yolks. Gradually add a small amount of the hot cream mixture to the yolks, whisking constantly, then return to the saucepan.
  • Cook over low heat, stirring constantly, until the sauce thickens and coats the back of a spoon. Remove from heat and strain to remove the vanilla pod.
  • Serve the warm bread pudding drizzled with vanilla sauce. Garnish with a sprinkle of cinnamon or freshly grated nutmeg if desired.

Notes

  • To twist this recipe, consider adding raisins or chocolate chips to the bread mixture before baking.
  • Or, swap the vanilla bean for a high-quality vanilla extract for convenience.
