Rustic New England Blueberry Pie: A Summer Delight

by Tammy Smith

Blueberry pie is one of America’s most cherished desserts, and our Rustic Blueberry Pie is a loving homage to this summertime classic. Rooted in the culinary traditions of New England — where wild blueberries thrive in abundance — this pie not only satisfies a craving for something sweet and fruity, but also serves as a symbol of seasonal bounty, homemade hospitality, and simple pleasures.

Its origins can be traced back to Native American traditions and early settlers who adapted their foraged ingredients to European baking techniques. Blueberries, indigenous to North America, were a staple for native tribes who dried them for winter use or incorporated them into stews and baked goods. When colonists arrived, they began using blueberries—along with abundant wild fruits like cranberries and strawberries—in desserts, leading to the evolution of what we know today as fruit pies. By the 19th century, blueberry pie had become a staple in rural kitchens across the Northeast.

This particular version, Rustic Blueberry Pie, pays homage to the “country-style” pies that emphasized hand-rolled crusts, minimal ingredients, and flavors that let the fruit shine. The rustic element isn’t just in the look—it’s in the approach. No fancy equipment, no complicated layers, just pure, honest ingredients and a method that’s as satisfying to make as it is to eat.

At the heart of the pie is the crust: a flaky, buttery shell made from scratch using all-purpose flour, cold unsalted butter, and just a pinch of sugar and salt. Ice water helps bind the dough without overworking it—key to a melt-in-your-mouth texture. Making the crust by hand might seem old-school, but it’s this tactile approach that differentiates a rustic, artisanal pie from its store-bought counterparts. It’s not meant to be perfect in shape; its charm lies in its homemade, imperfect beauty.

The filling is a celebration of blueberries in their purest form. Five cups of fresh or frozen berries are gently tossed with sugar, cornstarch, fresh lemon juice, zest, and a hint of cinnamon. The cornstarch plays an important role here, thickening the juices as the pie bakes to prevent sogginess and ensure a sliceable consistency once cooled. The lemon brightens the flavor of the berries and elevates their natural tartness, while the cinnamon adds subtle warmth—like a whisper of spice that perks up each bite.

An egg wash gives the crust its beautiful golden hue and soft sheen, helping transform a simple dough into something visually irresistible. The pie’s deep indigo filling will bubble up through the crust’s top slits as it bakes, filling your kitchen with a sweet, earthy aroma that speaks to old-fashioned comfort.

Traditionally served warm (sometimes with a scoop of vanilla ice cream or a dollop of whipped cream), this pie is more than just dessert—it’s a slice of Americana with each forkful. Whether made for a Fourth of July picnic, a family gathering, or a quiet treat for yourself, Rustic Blueberry Pie is a testament to the joys of baking with fresh, seasonal ingredients and the rewards of time spent in the kitchen. It invites you to slow down, embrace the process, and above all, savor the moment.

Blueberries, sugar, lemon juice, and a touch of cornstarch come together inside a homemade flaky crust in this straightforward blueberry pie. The filling sets up nicely as it cools, making clean slices easy to cut. Budget around an hour and a half from start to finish, plus cooling time before serving.

Equipment

  • 9-inch pie pan
  • Rolling pin
  • Mixing Bowls
  • Pastry brush
  • Oven

Ingredients

For the Crust:

  • 2 ½ cups all-purpose flour plus extra for dusting
  • 1 teaspoon salt
  • 1 tablespoon sugar
  • 1 cup unsalted butter cold and cubed
  • 6 tablespoons ice water more if needed

For the Filling:

  • 5 cups fresh blueberries or frozen, thawed and drained
  • ¾ cup sugar
  • 3 tablespoons cornstarch
  • 1 tablespoon lemon juice freshly squeezed
  • 1 teaspoon lemon zest
  • ¼ teaspoon cinnamon

For the Egg Wash:

  • 1 large egg beaten
  • 1 tablespoon milk

Instructions

  • In a large mixing bowl, combine the flour, salt, and sugar for the crust. Add the cold, cubed butter and use a pastry cutter or your hands to blend until the mixture resembles coarse crumbs.
  • Add the ice water, one tablespoon at a time, mixing just until the dough comes together. If necessary, add an additional tablespoon of water. Divide the dough in half, shape into disks, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  • Preheat your oven to 400°F (205°C). Roll out one disk of dough on a floured surface until it's about 12 inches in diameter. Fit it into a 9-inch pie pan, leaving any excess hanging over the edges.
  • In another mixing bowl, gently combine the blueberries, sugar, cornstarch, lemon juice, lemon zest, and cinnamon until the berries are evenly coated. Pour the filling into the prepared pie crust.
  • Roll out the second disk of dough and place it over the filling. Trim, fold, and crimp the edges to seal. Cut slits in the top crust to allow steam to escape.
  • Brush the crust with the egg wash (egg beaten with milk) for a beautiful golden finish. Bake for 50-60 minutes or until the crust is golden brown and the blueberry juices are bubbling through the slits.
  • Let the pie cool on a wire rack for at least 2 hours before serving to allow the filling to set properly.

Notes

  • To intensify the flavor, you might add a dash of vanilla extract to the filling.
  • If using frozen blueberries, be sure to thoroughly thaw and drain them before adding to the filling.
